Made for the first time to honour the coronation of Queen Elizabeth II in 1953, as one story tells. It gained in popularity in the 50’s and remains a Canadian staple to this day. The cake is reminiscent of a sticky toffee pudding, with a moist crumb, and a broiled topping made with brown sugar, butter, and coconut.
